Edamame-quinoa salad

Bereiding zonder Thermomix

Cook the edamame beans in boiling water for 3 minutes, let them cool down. Bring water to the boil, add the rinced quinoa and let it cook for 12 minutes, drain the water and let the quinoa cool down. Roast the pumpkin seeds in a pan and sprinkle some soy sauce over it. Peel the mango and cut it in pieces. Cut the cherry tomatoes in half, slice the radishes. Mix the oil, soy sauce and lime juice in a bowl. Add all ingredients and mix together.

 

 

Tip

Tip: you can add pieces of chicken to the salad for extra proteins

  • 100 g salad mix
  • +/-8 radishes
  • +/- 12 cherry tomatoes
  • 1 mango
  • 200 g edamame beans (frozen)
  • 100 g quinoa
  • 2 tbsp rice oil
  • 1 tbsp soy sauce
  • Juice of ½-1 lime
  • 25 g roasted pumpkin pits
